Beguni: Bengali Style Fried Eggplant Fritters 🍆

Beguni is a delicious and crispy Bengali snack made with eggplant (brinjal) coated in a seasoned gram flour (besan) batter, and then deep-fried until golden. It’s a popular snack enjoyed with tea or served as a side dish with rice and dal. Let’s dive into how to make this crispy treat!


Beguni Banano: Dorkar Upokoron:

  1. Brinjal (Eggplant) – 2 medium-sized 🍆 (preferably long, thin varieties)

  2. Gram Flour (Besan) – 1 cup 🌾

  3. Rice Flour – 2 tbsp (for extra crispiness) 🍚

  4. Turmeric Powder (Halud) – 1/2 tsp 🌿

  5. Red Chili Powder (Lal Mirch) – 1 tsp 🌶️

  6. Salt (Namak) – to taste 🧂

  7. Baking Powder – 1/2 tsp (optional, for extra fluffiness) 🍞

  8. Water – as needed 💧

  9. Mustard Oil (Shorsher Tel) – for deep frying 🛢️

  10. Cumin Powder (Jeera Powder) – 1/2 tsp 🌾 (optional)

  11. Green Chilies (Bora) – 1-2, chopped (optional) 🌶️


Beguni Bananor Paddhoti:

1. Prepare the Eggplants:

  • Prothome, eggplants (beguni) ke bhalo kore dhoye, patla patla (thin) tukro te kata. 🍆

  • Kata eggplant gulo ke pani te bhije rekhe, extra bitterness chhane din. 🙌

2. Prepare the Batter:

  • Ekta boro bowl e besan (gram flour), rice flour, turmeric powder, red chili powder, cumin powder (optional), baking powder (optional), and salt diye mix korben. 🌿🌶️

  • Ekhon, dheere dheere pani diye, batter ta thik consistency te banate thakben. Batter ta too thick hote hobe na, na hole beguni bhaja somoy batter ekdom jhorbe na. It should be thick enough to coat the eggplant slices well. 💧

3. Coating the Eggplants:

  • Eggplant tukro gulo ke besan batter e bhalo kore dip kore, puro tuku ke besan batter diye coat korben. 🍆

  • Ensure that each piece is evenly coated with the batter.

4. Frying the Beguni:

  • Ekta boro frying pan e mustard oil garam korben. 🛢️

  • Tel gormo hole, batter-coated eggplant tukro gulo diye deep fry korben.

  • Each piece should be fried till golden and crispy. 3-4 minute pratek side e bhaja hole, beguni ready! 🍽️

  • Shob tukro bhaja hole, extra tel chhante diye, tissue paper te rakhen.

5. Serve:

  • Beguni gulo garam garam serve korben, chutney, kachumber ba hot tea er sathe. 🍽️🍵
