Malai Kofta Recipe 🍛

Malai Kofta is a popular and delicious Indian dish, made with a rich and flavorful gravy served with soft, fried koftas. The koftas are typically made from paneer, potatoes, and sometimes, other ingredients like cream and spices.

Ingredients for Malai Kofta:

For the Kofta:

  • 2 medium-sized boiled potatoes 🥔

  • 1 cup paneer (cottage cheese) 🧀

  • 2 tablespoons all-purpose flour (maida) 🍞

  • 2 tablespoons cornflour (optional) 🌽

  • 1/2 teaspoon black pepper powder 🌶️

  • 1/4 teaspoon salt (to taste) 🧂

  • 1/2 teaspoon sugar (optional) 🍬

  • 1/4 teaspoon cardamom powder (optional) 🌿

  • Oil for frying 🛢️

For the Gravy (Masala):

  • 1 onion (finely chopped) 🧅

  • 1 tomato (pureed) 🍅

  • 1 teaspoon ginger-garlic paste 🧄

  • 1/2 teaspoon turmeric powder 🟡

  • 1 teaspoon coriander powder 🌿

  • 1/2 teaspoon garam masala 🧆

  • 1/2 teaspoon Kashmiri red chili powder 🌶️

  • 1/4 cup milk or cream 🥛

  • 1/2 cup water (for the gravy) 💧

  • Salt to taste 🧂

  • 2 tablespoons oil for cooking 🍳

  • 1 teaspoon dried fenugreek leaves (optional) 🍃

Instructions:

Making the Koftas:

  1. First, mash the boiled potatoes well. Then, add the paneer, all-purpose flour, cornflour, black pepper, salt, cardamom powder (if using), and sugar. Mix everything together and knead into a smooth dough. 👩‍🍳

  2. Roll small portions of the mixture into balls. You can stuff each ball with a piece of paneer or a small amount of dried fruits for extra flavor (optional). 🧀🍇

  3. Heat oil in a pan and fry the koftas until golden brown. Remove them and place them on a paper towel to absorb excess oil. 🍽️

Making the Gravy:

  1. Heat oil in a pan and add cumin seeds. Then, add chopped onions and sauté until golden brown. 🧅🔥

  2. Add ginger-garlic paste, tomato puree, turmeric powder, coriander powder, garam masala, and Kashmiri red chili powder. Stir well and cook the masala until it releases oil. 🍅🧄🌶️

  3. Add water and milk (or cream) to make the gravy. Let it simmer for 5-7 minutes. Add salt to taste and dried fenugreek leaves (optional). 🍶🍃

  4. Once the gravy is ready, gently add the fried koftas and let them cook in the gravy for another 5 minutes. 🍛

Serving:
