Kacchi Biryani: Traditional Bengali-Style Mutton Biryani 🍽️🍚
Kacchi Biryani is a rich and flavorful Bengali-style biryani made with marinated mutton, long-grain basmati rice, and aromatic spices. The process of making Kacchi Biryani is a bit more elaborate than regular biryani, but the end result is truly worth it! This biryani is cooked in the traditional “dum” method, where the meat is cooked along with the rice, making it tender and flavorful.
Kacchi Biryani Banano: Dorkar Upokoron:
For the Marinade:

Mutton (Macher Mangsho) – 1 kg 🐑 (preferably with bones, cut into pieces)

Yogurt (Dahi) – 1/2 cup 🍶

Ginger-Garlic Paste – 2 tbsp 🧄

Red Chili Powder – 1 tbsp 🌶️

Turmeric Powder (Halud) – 1/2 tsp 🌿

Garam Masala Powder – 1 tsp 🌶️

Cumin Powder (Jeera) – 1/2 tsp 🌾

Coriander Powder (Dhania) – 1 tsp 🌿

Lemon Juice (Lebu) – 2 tbsp 🍋

Green Chilies (Bora) – 3-4 🌶️ (slit)

Salt (Namak) – to taste 🧂

Mustard Oil (Shorsher Tel) – 2 tbsp 🛢️

Fresh Coriander Leaves – a handful 🌱

Mint Leaves – a handful 🌿
For the Rice:

Basmati Rice – 2 cups 🍚

Whole Spices (Tej Patta, Cinnamon, Cloves, Cardamom, Bay Leaves) – 2-3 of each 🌿

Salt (Namak) – to taste 🧂

Ghee (Clarified Butter) – 2 tbsp 🧈
For the Dum:

Fried Onions – 1/2 cup 🍽️ (optional, for garnish)

Saffron (Zafran) – a pinch (soaked in milk) 🌿

Ghee – 2 tbsp 🧈

Aluminum Foil or Dough – to seal the pan for dum cooking 🥖
Kacchi Biryani Bananor Paddhoti:
1. Marinate the Mutton:

Mutton ke bhalo kore dhoye niye, patla tukro te katben. 🐑

Ekta boro bowl e yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala powder, cumin powder, coriander powder, lemon juice, and salt diye bhalo kore mix korben. 🍋🌿

Ekhon, marinated mutton gulo te green chilies, fresh coriander leaves, mint leaves, and mustard oil diye bhalo kore mix kore, 4-6 ghonta (or overnight) marinate kore rakhben. 🍃
2. Cook the Rice:

Ekta boro pot e pani garm kore, whole spices (tej patta, cinnamon, cloves, cardamom) o salt diye basmati rice ta 70-80% cook kore niben. Rice ta purapuri paka diben na, just half-cooked thakbe. 🍚

Ekhon, rice ke chhane niye, ghee diye lightly toss korben. 🧈
3. Layering the Biryani:

Ekta boro heavy-bottomed biryani pot e marinated mutton layer kore diben. 🐑

Tarpor, upar theke 1/2 cooked rice layer korben, aro fried onions, mint leaves, coriander leaves, ghee, and saffron milk diye garnish korben. 🌱

Rice o mutton er layer bhalo kore taare ba rakhben, jeno mixture evenly spread hoye jaye.
4. Dum Cooking:

Pot er dike aluminum foil or dough diye tightly seal korben, jeno steam ba aroma biryani te dhuke jay. 🥖

Pot ke medium heat e rakhen 30-45 minute porjonto dum diye, jeno mutton fully tender hoye rice er sathe bhalo bhabe mix hoye jaye. 🔥
5. Serve:
