Puri & Aloo Bhaji: Bengali Breakfast Delight 🍽️

Puri and Aloo Bhaji is a classic and comforting breakfast combination in Bengali cuisine. The crispy, puffed puris paired with a spicy, flavorful potato curry (aloo bhaji) make for a perfect start to the day. Here's how you can make this delicious meal at home!


Puri Banano: Dorkar Upokoron:

  1. Whole Wheat Flour (Atta) – 2 cups 🌾

  2. Semolina (Suji) – 1 tbsp (optional, for extra crispiness) 🍚

  3. Salt (Namak) – 1/2 tsp 🧂

  4. Carom Seeds (Ajwain) – 1/2 tsp 🌿 (optional, for flavor)

  5. Warm Water – 3/4 cup 💧

  6. Oil – for deep frying 🛢️


Puri Banano: Paddhoti:

1. Prepare the Dough:

  • Ekta boro bowl e atta, suji, ajwain, ebong namak diye mix kore, ekto shukno mixture banate hobe. 🌾🍚

  • Pore, dheere dheere garam pani diye, ekta soft dough ready korben. Dough ta khub soft o smooth hote hobe.

  • Puri’r dough ta 10-15 minute cover kore rakhen, ektu rest debe. 🍞

2. Roll the Puris:

  • Dough ke chhoto chhoto balls e katben. 🌾

  • Ekta rolling pin diye, puri gulo patla kore belben, kintu baire na phailate cheshta korben. Puri gulo should be small and round. 🍞

3. Fry the Puris:

  • Ekta boro pan e tel (oil) garam kore, puri gulo ek sathe fry korben.

  • Puri gulo tel e diye, dheere dheere press korben, jate puri gulo bhalo bhabe puff hoye jaye. 🛢️

  • Puri gulo golden brown hole, extra oil chhane niye, tissue paper te rakhen. 🍽️


Aloo Bhaji (Potato Curry) Banano: Dorkar Upokoron:

  1. Potatoes (Aloo) – 3-4 medium-sized 🥔

  2. Mustard Oil (Shorsher Tel) – 2 tbsp 🛢️

  3. Cumin Seeds (Jeera) – 1 tsp 🌿

  4. Turmeric Powder (Halud) – 1/2 tsp 🌿

  5. Red Chili Powder (Lal Mirch) – 1 tsp 🌶️

  6. Green Chilies (Bora) – 2-3 ta 🌶️ (slit)

  7. Salt (Namak) – to taste 🧂

  8. Water – 1 cup 💧

  9. Coriander Leaves (Dhania Pata) – for garnishing 🌱


Aloo Bhaji Banano: Paddhoti:

1. Prepare the Potatoes:

  • Aloo gulo ke bhalo kore dhoye, chhilo dhore, ebong small cubes e katben. 🥔

2. Cooking the Aloo Bhaji:

  • Ekta boro pan e mustard oil garam korben. 🛢️

  • Tel garam hole, jeera (cumin seeds) diye bhaja, aro 1-2 minute dhore.

  • Tarpor, halud (turmeric powder) ebong lal mirch (red chili powder) diye mix korben. 🌶️

  • Ekhon, aloo gulo diye bhalo kore mix korben, jeno masala gulo aloo’r sathe bhalo bhabe mile jaye. 🥔

  • Salt ebong green chilies diye, ekto pani (water) die simmer (slowly cook) kora deben, jeno aloo gulo soft hoye jaye. 💧

  • Jodi chaile, dhania pata diye garnish korte paren. 🌱

3. Serve the Aloo Bhaji:

  • Aloo Bhaji ready! Puri gulo’r sathe garam garam serve korun! 🍽️
